The HottBox Is The Maltster Of Agave
With grain, the maltster prepares it. With agave, HottBox modifies inulin to fermentable sugar. The HottBox coaxes that piña fiber to open slowly and gently, converting the insulin without destroying or burning it. This is a specialized choice, not commodity processing, for distillers who want the agave’s character preserved and not cooked away.
The Two-Step System
Step 1 - Steam
Gentle steaming
Slow, controlled steam coaxes the piña fibers to open and, most importantly, captures the juices that are released during steaming. Those early juices are lost in horno, pit, and autoclave methods. The HottBox preserves them.
Step 2 - Mill
Milling to must
The steamed piña is then milled to produce must. This yields the fiber many distillers want and the majority of the juice distillers carry into fermentation.

Steam penetrates the piñas. Inulin conversion occurs. Must is released. Condensate accumulates. Sugar-rich liquids drain into the internal tray system and are captured — a recovery step completely absent in horno, pit, and autoclave methods.
Phase 2 - Post Cook Mechanical Extraction

The softened post-cook fiber is shredded agave, then processed through the hammer mill — releasing retained liquid and maximizing total fermentable sugar recovery from every piña.
